Star Count is the number of stars that are on a piece of gear. There can be up to three stars on a piece of gear, or five stars in Splatoon 3, whether it be headgear, clothing, or shoes.
Each Star on a particular piece of equipment represents the number of slots initally on said piece of equipment.
You can add slots (which do not change the equipment's star count) onto a piece of equipment by purchasing and using a Super Sea Snail (from the Alley for 30,000 coins), or earning them after a Splatfest.
In Splatoon 3, the star count can be increased by spending coins on an already owned gear at its respective shop. This can only be done once per day as the gear will be listed as out of stock when upgraded, and the player will have to wait until the gear shows up again in the shop's randomized stock. Increasing the star count this way will also increase the ability slots up to three slots. Any further stars are only for display and to count towards certain Badges.
Gear bought from Spyke or Murch will arrive with a number of gear slots matching the number of stars it has. This is significant as other players tend to add slots to their gear.
